Domaine Cazes' Canon du Maréchal Blanc BIO is an IGP Côtes Catalanes white wine crafted from a blend of 35% Muscat d’Alexandrie, 35% Muscat à Petits Grains, and 30% Viognier. Sourced from biodynamic and organic vineyards, the wine features a sablo-limoneux and argilo-calcaire terroir with schist and siliceous gravel, enhancing its complexity. Harvested mechanically at night to preserve aromas, it undergoes direct pressing, cold fermentation at 16°C, and is bottled within 6 months, stored in a climate-controlled cellar.
The wine showcases a highly aromatic nose of white flowers and grapefruit, with a dry, balanced palate offering refreshing acidity and a finish of pear and white peach. Ideal as an aperitif or paired with wild asparagus, citrus salads, fish, or seafood in sauce, it serves at 12°C. Awarded Gold at the 2023 Concours des Grands vins de Mâcon, this vibrant, fruity wine embodies Catalan terroir and is best enjoyed within 1–2 years.
