If you regularly prepare portions in bags, compare the roll width, suction control features and how easy the appliance is to clean. For delicate foods, check whether the model you choose has a Pulse or Stop function. If you prefer containers, a pump and compatible containers offer another option, but they don’t replace the need to keep food chilled, handle it hygienically and follow use-by dates.
Who is vacuum sealing for batch cooking suited to?
Households preparing portions for the week
If you prepare several portions at once, choose bags or containers that suit your food and the space you have available. Saveurs Magazine’s guide highlights the importance of how often you’ll use the appliance, the types of food you prepare and the space in your kitchen.
Anyone preparing delicate or moist foods
For foods that could be crushed or leave residue behind, check how to stop the vacuum process and which parts of the appliance can be cleaned. Features vary between models.
Users of reusable containers
If you’d rather open, wash and reuse containers or bags, check that the pump, valves and containers are compatible with one another and suitable for the intended use.
What should you compare before buying?
When choosing a home vacuum sealer, start with the portions you prepare most often, then check compatible formats, suction controls and storage options.

Mistakes to avoid
-
Assuming vacuum sealing sterilises food
Vacuum-packed perishable foods are not sterile. Anses warns that improper storage or a break in the cold chain can encourage bacteria to grow.
Keep foods that need chilling in the fridge and follow their use-by dates, whatever system you choose.
-
Confusing moist mode, stopping suction and containers for liquids
Dry/moist settings, Pulse and Stop are different features. A ‘moist’ setting doesn’t mean you can suck any liquid directly into the appliance.
Check the function specified for your model and read the manual. For very liquid preparations, consider a compatible container if the instructions allow it.
Using the wrong bag size can waste bags or mean more cleaning.
-
Comparing appliances without checking the consumables
A heat sealer uses compatible bags or rolls, while a pump system relies on suitable containers and valves.
Check exactly what’s included in the kit and make sure the replacement format suits the portions you prepare.

Frequently asked questions
Can you leave perishable food at room temperature after vacuum sealing it?
No. Vacuum sealing doesn’t replace refrigeration. Anses recommends keeping meat, fish and cooked dishes in the coldest part of the fridge, and reminds consumers that perishable foods in bags are not sterile.
Which function should you use for delicate or moist foods?
Check the features on your model: Pulse, Stop and dry/moist settings mean different things. For very liquid preparations, read the manual and check whether a compatible container is intended, rather than assuming moist mode is suitable for every liquid.
Can a reusable bag go in the dishwasher or be heated?
Only if the instructions for that bag say it’s safe to do so. The DGCCRF recommends following the intended use and not reusing single-use containers. ZWILLING says its Fresh & Save FlexBags are reusable and dishwasher-safe, but this doesn’t apply to all bags.
How can you check whether bags are suitable for a sealer?
Compare the format and width of the bags or rolls with the specifications for your chosen model. Don’t assume that every roll or bag is compatible with every sealer. For a pump system, also check that the valves and containers are compatible.
Does vacuum sealing let you use food past its use-by date?
No. Anses recommends following use-by dates and keeping food that needs chilling in the fridge. A manufacturer’s freshness claim doesn’t change this advice.
