Who are these options for?

Households that regularly portion and freeze food

You divide ingredients or meals into portions before storing them. Check that your chosen bags are suitable for the food and for freezing, then organise your storage without interrupting the cold chain.

People handling wet or delicate foods

If your portions release liquid or could be crushed, compare models with settings for moist foods and control over the vacuum pressure. A moist-food mode alone does not mean the machine or bag is suitable for liquids.

Households with limited space

You may not want to leave the machine on the worktop. Compare its dimensions and storage options; if you’re considering containers, measure how much room they’ll take up in the fridge too.

What should you look for before buying?

Compact bag sealer

Worth considering: for preparing portions that are suitable for bags, especially if storage space for the machine matters.

Limitation: standard vacuum sealing does not, by itself, confirm that the machine is suitable for liquids or delicate foods.

Vacuum sealer with adjustable settings

Worth considering: if you switch between dry, moist and delicate foods and need to adjust the vacuum pressure for each portion.

Limitation: features vary by model; check separately whether the bags are suitable for liquids.

Vacuum containers

Worth considering: for storing prepared meals or ingredients in reusable, rigid containers.

Limitation: containers take up space and must be compatible with the pump and lids in your chosen system.

Freezing

Worth considering: alongside portioning when you plan to store food for longer than its intended time in the fridge.

Limitation: vacuum sealing does not remove the need to follow food-specific freezing and defrosting guidance.

To choose between these options, start with your main need, then check the operating requirements for the appliance and its containers.

Criteria What to check Who is it for?
Cold storage and food safety Follow the guidance for the food and check its use-by date. For high-risk foods, Anses recommends keeping them at 4 °C in the coldest part of the fridge. If I prepare portions of meat, fish or cooked meals, I want to store them without losing track of how long they’ll keep; around 31% of consumers would put this first.
Wet or delicate foods Check whether the model offers moist-food or liquid settings, as well as a manual stop, Pulse mode or gentle vacuum setting if needed. For foods that release liquid or are easily crushed, I want to control the vacuum sealing; this would be the main need for around 23% of consumers.
Size Compare the dimensions, the space needed to open the machine and, where relevant, whether it can be stored upright or how much room the containers will take up. With a small worktop, I want to be able to get my equipment out and put it away easily; around 23% of consumers would prioritise this aspect.
Consumables and cleaning Check which bag or roll sizes and product codes are compatible, what accessories are included, and the cleaning and re-use instructions. If I portion food often, I want to be able to find the right consumables and maintain the system easily; around 23% of consumers would put this ahead of other criteria.

Mistakes to avoid

  • Assuming vacuum sealing replaces cold storage

According to Anses, poor storage, a break in the cold chain or cross-contamination can encourage bacteria to grow. Vacuum sealing does not change the food-specific storage guidance.

Use the machine to portion and organise food, while following use-by dates, temperature requirements and defrosting instructions.

  • Assuming the standard setting is suitable for every food

Settings for moist, liquid or delicate foods vary between machines. For example, Tefal states that one of its bag products is not suitable for liquid foods.

Make a list of the foods you’ll package most often, then check the model’s features and the restrictions for the relevant container.

  • Forgetting to check consumables are compatible

Bag width, accessories and re-use guidance depend on the product you choose. A bag that fits one machine may not work with another system.

Before buying, check the accepted dimensions, replacement product codes and included accessories.

  • Overlooking the space you’ll need day to day

The machine’s dimensions don’t tell the whole story: you’ll also need room to open the lid and store any rolls or containers.

Measure the space where you’ll use and store the machine, as well as the available room in your fridge if you choose containers.

Brands to know

Tefal

The Vacupack range includes bag sealers and accessories for portioning food at home.

  • Tefal says the Vacupack Classic can be stored upright, while the Vacupack Plus offers Moist/Dry and Pulse settings.

FoodSaver

The brand offers bag sealers as well as models with different controls for different types of food.

  • FoodSaver lists the VS2190X as featuring a Moist/Dry mode, independent sealing, roll storage and a drip tray.
  • Don’t assume features are the same across the range: check the settings and accessories for the specific model you’re considering.

  • According to LAICA, the VT3120 offers normal or gentle vacuum pressure, with dry, moist and wet settings.

Frequently asked questions

Can vacuum sealing keep high-risk food out of the fridge?

No: it does not replace refrigeration or use-by dates. For meat, fish and cooked meals, Anses recommends keeping them at 4 °C in the coldest part of the fridge; also follow the instructions for the specific food.

When should you freeze food as well as vacuum sealing it?

Freezing can complement portioning when you don’t plan to eat the food within the recommended fridge storage period. Follow the freezing and defrosting guidance for each food: vacuum sealing a portion doesn’t remove the need for these precautions.

Can you put sauce in any vacuum sealer?

No: check that the model and its container are explicitly suitable for liquids. For example, Tefal says one of its bag products is not suitable for liquid foods. So, a moist-food setting on a machine doesn’t mean that all bags are suitable for sauces.

Can vacuum sealer bags be re-used?

It depends on the product and the food inside. Tefal advises against re-using some of its bags after storing raw meat, raw fish or fatty foods. Check the instructions for the bag before using it again.

What should you check when buying in France, including after-sales support?

Check who the seller is, which accessories and consumables are compatible, and what warranty information is available. The DGCCRF distinguishes between the statutory legal guarantee of conformity and commercial guarantees offered by businesses. Check the terms of any commercial guarantee without confusing it with your statutory rights.
