Which option is right for you?

Regular bread, pizza and brioche makers

If you often make yeasted dough, compare the permitted dough quantity, the dough hook supplied and the kneading guidance for each model. A stated capacity for cake mixture is no substitute for a limit specified for yeasted dough.

Home bakers making cakes and small batches

If you switch between cakes, whipped cream and whisked egg whites, pay as much attention to the whisk and beater as to the dough hook. Also check the manufacturer's guidance on small quantities: the bowl's maximum capacity won't tell you this.

Occasional cooks with limited space

If you only knead dough occasionally, consider whether a dedicated appliance is worth the space in your kitchen. A food processor may also meet your chopping needs, while a bread maker is designed for different recipes and stages. In either case, check the functions and limits of the model you're considering.

What should you check before choosing?

Stand mixer

Consider it if: kneading, whisking and mixing feature regularly in your recipes, and the package includes the attachments you need.

Bear in mind: you'll need somewhere to store it, and each model has its own load and operating-time limits.

Food processor

Consider it if: you rarely knead dough and mainly want other functions too, such as chopping, grating or slicing.

Check: a kneading function alone doesn't tell you what quantities or types of dough the appliance can handle.

Bread maker

Consider it if: bread, pizza dough or recipes that need to rise are your priority; Panasonic lists these programmes on its SD-YR2550.

Bear in mind: these programmes won't necessarily replace the whisk and beater used for a range of baking tasks.

Preparing dough by hand

Consider it if: you make small quantities or only bake very occasionally, and don't want to give up space for an appliance.

Bear in mind: kneading yeasted dough by hand takes time and effort, which you'll need to put in yourself.

To choose between these options, start with the recipes you make most often, then compare the quantities you need with the attachments and guidance for the specific appliance.

What matters to you What to check Who is this for?
Yeasted dough Maximum permitted quantity for the dough in question, plus speed and operating-time guidance. I often make bread or brioche and want every batch to stay within my appliance's limits; around 36% of consumers prioritise this kneading requirement.
Cakes and small quantities Whisk and beater supplied; manufacturer's guidance for small batches. When I make cream or whisk a few egg whites, I want the right attachments rather than simply a large bowl; this is the top priority for around 29% of consumers.
Storage and maintenance Appliance dimensions and whether replacement parts are compatible with its exact model number. I need to be able to store the mixer and find the right parts if an attachment needs replacing; nearly 21% of consumers make these their priority.
Occasional use Functions actually available and kneading limits for the alternative you're considering. If I only make dough now and then, I'd rather look at an appliance that can handle other tasks too, or make it by hand; around 14% of consumers prioritise this.

What mistakes should you avoid?

  • Assuming the bowl's capacity in litres equals its dough capacity

The figures refer to different things: Bosch lists a 3.9 L bowl and up to 1.9 kg of yeasted dough for the MUM58200E, while Moulinex lists a 4.6 L bowl and up to 0.8 kg of bread dough for the QA5001B1. The specified dough types also need to be kept distinct.

Compare the amount in your recipe with the stated limit for that type of dough, not just the bowl capacity.

  • Assuming a “kneading” function can handle heavy dough

KitchenAid lists kneading among the functions of its 1.7 L 5KFP0719 food processor. This list of functions isn't enough to establish the load or operating time suitable for regular batches of bread or pizza dough.

Before choosing a food processor for this purpose, check the kneading guidance for its exact model number.

  • Kneading for longer without checking the instructions

For the mixers covered by its FAQ, KitchenAid recommends speed 2 and advises against kneading bread dough for more than 2 minutes. The brand also sets a limit of 4 to 6 minutes for mixing and kneading combined. These instructions don't automatically apply to other appliances.

Follow the speed and operating-time limits for your model and dough, even if a recipe gives a different time.

  • Assuming every package includes the same attachments

The dough hook, whisk and beater each have a different purpose. An attachment offered for a product range won't necessarily be compatible with every model in that range.

Check which attachments are included in the package you choose, then check the model number required for any parts or accessories you might want later.

An attachment sold separately will also need to be stored, and you must choose a compatible version.

Brands to consider, model by model

These examples can help you compare specific models; the capacities and accessories listed for one model don't apply to the whole brand.

KitchenAid

The brand publishes quantities and kneading guidance for several Artisan and bowl-lift stand mixers.

  • According to KitchenAid France, some 4.8 L Artisan models can handle up to 1 kg of flour, while some 6.9 L models can handle up to 2.2 kg of flour. These limits apply only to the models concerned.
  • For bread making, check KitchenAid's published speed and operating-time guidance against the instructions for the model you've chosen.

Kenwood

Some models combine a baking attachment kit with additional functions or accessories.

  • Kenwood France lists a 7 L bowl for the Titanium Chef Baker XL KVL65.009WH, supplied with a dough hook, whisk and K-beater.
  • Check the package contents and compatible accessories for the model you're considering; these vary between product ranges.

Bosch

MUM models let you compare the stated quantities for different types of dough.

  • Bosch Électroménager France lists a 3.9 L stainless-steel bowl for the MUM58200E, with capacity for up to 1.9 kg of yeasted dough and up to 2.7 kg of cake mixture.
  • Don't assume the attachments supplied or the quantities permitted from the MUM name alone: check the package and specifications for the exact model.

Moulinex

The Masterchef Gourmet QA5001B1 comes with several baking attachments and stated capacities for different preparations.

  • Moulinex France lists a 4.6 L bowl, a whisk, dough hook and beater for this model, with a stated limit of 0.8 kg of bread dough.
  • If you need to replace the bowl, whisk or dough hook, check compatibility with the exact service reference.

Frequently asked questions

Is wattage enough to choose a mixer for bread making?

No. For bread making, first compare the permitted dough quantity and kneading guidance for the specific model. Bosch lists capacity for up to 1.9 kg of yeasted dough for the MUM58200E, while Moulinex lists up to 0.8 kg of bread dough for the QA5001B1. These limits refer to different types of dough and, on their own, don't rank kneading performance.

What are the whisk, dough hook and beater used for?

They're designed for different preparations: Moulinex recommends using the whisk supplied with the Masterchef Gourmet QA5001B1 for egg whites and whipped cream, the dough hook for bread or pizza dough, and the beater for cake mixtures. Check what's included with the model you're buying.

Can you knead bread dough for longer?

First follow the speed and operating time specified for your appliance, rather than extending the cycle based solely on a recipe. For the mixers covered by its FAQ, KitchenAid advises against kneading bread dough for more than 2 minutes at speed 2 and sets a maximum of 4 to 6 minutes for mixing and kneading combined; don't apply these limits to another brand.

How do you choose a model with replaceable attachments?

Make a note of the appliance's exact model number and check compatibility separately for the bowl, whisk and dough hook you might need. Moulinex offers these types of parts for its stand mixers, but the right replacement depends on the specific service reference.
