Who is this guide for ?

A stand mixer really comes into its own if you regularly make bread, brioche or other bakes, or need to prepare large quantities, as Que Choisir points out.

Home bakers making large batches

You regularly knead bread or brioche dough. Before choosing, compare the maximum dough quantity for the exact model with your recipes, and check that it comes with a dough hook and will fit where you plan to use it.

Bakers who make batches of different sizes

You switch between whisking egg whites and cream, making cakes and mixing denser doughs. The included tools and stated limits for each type of preparation, including small quantities, matter more than the bowl capacity on its own.

Home cooks who want to prepare other foods too

You also want to grate, slice, blend or chop. A stand mixer with attachments or a food processor may suit these tasks, provided the accessories you want are compatible, genuinely useful and easy to store.

What should you look for ?

For frequent, large-scale baking, check the dough limits and included tools first. If slicing or blending matters as much as baking, consider a food processor with documented dough-kneading capabilities too. For occasional small batches, mixing by hand means you won’t need to give an appliance a permanent spot on your worktop.

What to consider What to check before you buy Who is it for ?
Dough quantity The maximum bread or enriched dough quantity stated for the exact model, compared with the size of your usual batch. If I want to knead a batch of bread or brioche without dividing the recipe, the dough limit is my main priority. Around 37 % of consumers also prioritise dough quantity.
Baking preparations Whether it comes with a whisk, beater and dough hook, and the permitted quantities for each type of preparation. I switch between small whisked mixtures, cakes and denser doughs, so I want the tools and mixer limits to suit each one. Around 27 % of consumers prioritise this versatility for baking.
Food-preparation attachments Which functions are genuinely useful, which accessories are included or optional, and whether they’re compatible with the model. I also want to grate, slice or blend regularly without accumulating accessories I’ll never use. Food-preparation attachments are the main priority for around 18 % of consumers.
Setup and cleaning Available worktop space and clearance, how easy it is to handle the bowl when full, and cleaning instructions for the parts. In a kitchen with limited space and storage, I want to be able to set up, use and clean the mixer without too much difficulty. Around 18 % of consumers put these everyday considerations first.

What should you watch out for ?

  • Assuming litres or watts tell you how much dough it can knead

The dough limit depends on the model and the type of preparation. A larger bowl or a higher stated wattage doesn’t, on its own, tell you how much bread dough the mixer can handle.

Compare the limit in the instructions for the exact model with the weight of your usual recipe, and distinguish between dough, flour and bowl capacity.

If the bowl isn’t suitable for your recipe, you may have to split the dough into several batches.

  • Choosing lots of attachments without considering how you’ll use them

Grating, chopping and blending functions are only useful if they suit the food you prepare. Some attachments are optional and take up space.

Make a list of the functions you need, then check what’s included with the model you’ve chosen, what’s compatible and where you’ll store the parts.

Attachments also mean more parts to clean after use.

  • Overlooking the space you need and how easy the bowl is to handle

You need to be able to set up and handle the mixer and its filled bowl in the kitchen where you plan to use it. A large bowl may be more awkward to move, empty or clean.

Measure your worktop and the clearance above it, then check the weight, handles and washing instructions for the bowl and tools.

  • Confusing a retailer’s guarantee with your statutory rights

A commercial guarantee offered by a brand or retailer doesn’t replace your statutory rights. The French Ministry of the Economy explains that the legal guarantee of conformity applies to new, second-hand and refurbished goods sold by a business to a consumer.

Keep your proof of purchase and the product description. If the product doesn’t match the contract or has a lack of conformity, contact the retailer. Check the terms of any commercial guarantee separately.

Brands to consider

The specifications below apply to the models mentioned, not every mixer made by each brand. If you have a particular batch in mind, always compare the instructions for the model you’re considering with your recipe.

Kenwood

Stand mixers to consider if you want to knead, mix and whisk, with the option to add certain functions depending on the model.

  • Kenwood lists a 4,6 L bowl and more than 30 optional, compatible attachments for the Chef Titanium KVC7305S.
  • Check which attachments are suitable for the model you’ve chosen, which are included and how much space they’ll need.

KitchenAid

A brand worth considering if you want to compare the maximum quantities stated for different models and configurations.

  • KitchenAid publishes quantity charts by model and ingredient. The figures listed can be up to 1 kg of flour for some 4,8 L tilt-head models and 2,2 kg for some 6,9 L bowl-lift models featured in these charts.
  • These limits don’t apply to every KitchenAid mixer. Check the entry for the model and preparation you’re interested in.

Bosch

Models to compare if the stated quantity of enriched dough is important to your choice.

  • Bosch lists a 3,9 L bowl and a capacity of up to 1,9 kg of enriched dough for the MUM58L00.
  • This limit applies to the MUM58L00. Check the capacity and accessories separately for any other MUM model.

Moulinex

A model to consider if the included food-preparation attachments matter as much as the baking tools.

  • Moulinex lists a 4,6 L bowl, three baking attachments, a blender and a grating and slicing attachment for the Masterchef Gourmet QA502GB1.
  • The stated 0,8 kg bread dough limit for this model should be compared with the size of your batches. It doesn’t apply to other Masterchef models.

Frequently asked questions

Which figure should I check for a large batch of bread dough ?

Check the maximum bread dough, enriched dough or flour quantity stated for the exact model, using the specified unit and type of preparation. Bowl capacity in litres isn’t a substitute for this limit: compare it directly with your usual recipe.

Are wattage and the number of speeds enough to compare two mixers ?

No. If you’re making bread and bakes in large quantities, also check the stated dough capacity, included tools, and the space and cleaning requirements. Que Choisir advises against comparing mixers based on wattage or the number of speeds alone.

What should I check before choosing extra attachments ?

Check that they’re compatible with the exact model, whether they’re included in the box and how much storage space they’ll need. If grating, chopping or blending aren’t part of your regular routine, these functions don’t need to guide your choice of mixer for kneading.

What guarantee applies to a mixer bought from a business in France ?

According to the French Ministry of the Economy, the legal guarantee of conformity applies to new, second-hand and refurbished goods sold by a business to a consumer. This is separate from any commercial guarantee. If the product doesn’t conform, contact the retailer and keep the information describing the product you bought.
