Matcha is taking over our cups and kitchens, but how do you navigate the sea of choices? Between the different grades, origins, and formats, choosing the right matcha powder can quickly become a daunting task. Whether you're a curious tea lover, a matcha latte aficionado, or an aspiring pastry chef, this guide is designed to enlighten you and help you find the product that will perfectly meet your needs.
Our goal: to give you the keys to making the right choice, without the marketing fluff.
To ensure you make the right purchase, a few simple criteria will set you on the right path.
There's a matcha for every purpose! This is the number one criterion.
A Japanese matcha remains the gold standard for quality, especially those from the Uji, Nishio, or Fukuoka regions. Opting for an organic matcha guarantees it was grown without synthetic pesticides.
Visually, the eye is an excellent judge: a high-quality powder boasts a bright, almost fluorescent green. Steer clear of powders with yellowish or khaki hues, which indicate poor quality or improper storage. The fineness of the matcha powder is also a valuable clue; it should be as fine and light as cornstarch.
Powdered green tea is vulnerable to air, light, and moisture. Its packaging is therefore crucial for its preservation.
To get you started, here is our selection of three matchas with very distinct profiles.

It's simple: sift 1 to 2 grams of powder (one level teaspoon) into a bowl. Pour in 70 to 80 ml of hot water, around 75-80°C (never boiling!). Whisk vigorously with a bamboo whisk (chasen) or a small milk frother in a "W" or "M" motion until you get a fine, creamy foam. Enjoy immediately.
It's all in the preparation and the form. For regular green tea, you infuse the leaves in hot water before removing them. With matcha, you ingest the entire tea leaf, which has been finely ground into a powder. This means you benefit from 100% of its nutrients and antioxidants.
Matcha is a delicate product. To preserve its colour, aroma, and benefits, it is essential to store it in an airtight container, away from light, heat, and moisture. Once the pouch is opened, the refrigerator is your best friend for slowing down oxidation. Just remember to take it out a few minutes before use to prevent condensation.
