Chinese hot pot, or simply hot pot, is much more than a meal?it's a ritual, a shared moment where everyone dips their favourite ingredients into a simmering broth. This broth is the true star of the show, infusing meats, vegetables, and tofu with flavour. While preparing a worthy homemade broth can be an uphill battle (rare ingredients, long simmering times...), ready-to-use bases are a godsend for recreating that unique atmosphere at home. Follow our guide to find the perfect hot pot base for your next homemade Chinese hot pot.
Choosing a Chinese hot pot broth is above all a matter of taste. Intensity, flavour, spiciness... here are the key criteria to find the one that's right for you.
The first question to ask yourself is about chilli. It's often what divides hot pot enthusiasts.
Once the spice question is settled, consider the broth's aromatic foundation. A mushroom broth will offer earthy notes and deep umami, while a tomato broth will provide a tangy freshness with a hint of sweetness. Other bases can be built on beef, seafood, or a complex blend of herbs and spices.
Take a look at the ingredient list to avoid any unpleasant surprises. Some bases come in a solid paste form, others as a sachet of oil and powder to be mixed. Most simply dissolve in boiling water, promising a delicious meal without spending hours in the kitchen.
To get you started, here is our selection of three broths from the Shoo Loong Kan brand, a benchmark whose recipes are directly inspired by the culinary tradition of Chengdu.

1. How do I prepare a Chinese hot pot broth base? It couldn't be simpler! Generally, you just need to pour the contents of the sachet (paste, powder, or oil) into the volume of boiling water indicated on the packaging (often between 1 and 2.5 litres). Mix well until completely dissolved, let it simmer for a few moments, and it's ready! Your ingredients are just waiting to be dipped. Always remember to check the specific instructions for your product.
2. What ingredients go well with a spicy Sichuan broth? A Sichuan broth calls for ingredients that can soak up its powerful flavours. Think of thin slices of meat (beef, lamb), meatballs, offal for the more adventurous, all forms of tofu (firm, silken, fried), leafy vegetables like napa cabbage, a good variety of mushrooms (enoki, shiitake), and of course, noodles.
3. My broth is too spicy, what can I do? Don't panic! To tone down the heat, the easiest solution is to dilute the broth by adding more water or a neutral broth (like chicken broth). If your base comes in several sachets (oil, spices), you can also simply reduce the amount of chilli oil or chilli powder you add during preparation.
