Food sugar: how to choose the right format for baking, drinks and cooking

Buying food sugar seems simple… until you have to choose between white sugar, brown sugar, icing sugar, vanilla sugar or Asian sugar. The wrong format can change the texture of a dough, dissolve poorly in a drink or end up forgotten at the back of the cupboard.

To make the right choice in France, it is best to look beyond the promises on the packaging and check three points: the ingredients, the grain size and the packaging.

Common pitfalls when buying sugar

1. Confusing colour with use

A brown, black or amber colour does not automatically mean that the product is suitable for every recipe. Depending on the product, brown sugar, unrefined brown sugar or black sugar may contain molasses, cane juice or simply a colouring agent.

For example, WEISUN Brown Sugar 450 g lists sucrose and E150a colouring, while WEISUN Black Sugar 600 g mentions sugar and a small proportion of molasses. These products can add a different touch to drinks and desserts, but they will not always replace white sugar in a meringue or light cream.

2. Paying more for a vague promise

Descriptions such as ‘natural’, ‘traditional’ or ‘authentic’ reveal neither the fineness of the crystals nor the actual proportion of the flavouring ingredient. For ginger or goji berry sugar, take the time to check the ingredients list and net weight.

HUASEED Goji Berry Brown Sugar 280 g, for instance, states that it contains 90.3% brown sugar and goji berry powder. Taikoo Ginger Brown Sugar 300 g contains brown sugar and ginger powder. These are therefore flavoured sugars to be used according to the result you want, rather than universal substitutes for white sugar.

3. Overlooking moisture and packaging

Icing sugar and some brown sugars absorb moisture easily. A poorly sealed bag can quickly form lumps and make measuring more difficult. Conversely, larger formats reduce the need for repeat purchases, but they are only worthwhile if you use the product regularly.

A sealed package, resealable jar or individual sachets can therefore matter just as much as the price per kilogram.

Criteria to check before ordering

Ingredients and origin

Start by reading the ingredients list. Some white sugars are made from 100% sugar, such as the Béghin Say Granulated Sugar Pourer Box 1 kg, manufactured in France according to the information provided. Cane sugar, palm sugar and panela offer more distinctive profiles, but their composition can vary from one product to another.

Goya Panela Redonda 454 g is presented as a product made from sugar cane juice. Lucullus Palm Sugar Gula Djawa Slice 1 kg combines 98% sugar from coconut palm sap with cane sugar and also contains E211 preservative. This is an important difference to check before buying, particularly if you are looking for a single-ingredient product.

Grain size and dissolving

Granulated sugar, also known as caster-style granulated sugar, is suitable for most everyday uses: coffee, tea, stewed fruit, sauces and baking. Its fine crystals dissolve more quickly, in both cold and hot preparations.

Icing sugar is particularly practical for icing, decoration and certain creams. Béghin Say Icing Sugar 500 g contains 97% sugar and 3% cornflour, a formulation designed to limit clumping. It therefore does not behave exactly like granulated sugar in a recipe.

Vanilla sugar adds flavour as well as sweetness. Dr. Oetker Vanillasugar 10 g contains sugar and vanillin. ALSA Sucre Vanillé des Isles combines cane sugar, starch, exhausted vanilla pod and natural vanilla extract.

Weight and frequency of use

For a family or keen home baker, a 500 g to 1 kg packet can be a good compromise. Sticks, such as the Béghin Say box of 600 x 5 g, are more suited to offices, cafés, guest houses and catering professionals.

For an occasional recipe, a small 10 g or 200 g format avoids storing a flavoured product for too long. For Asian desserts, hot drinks and sauces, a block or slices of palm sugar can be suitable, provided you dissolve them in a hot liquid or grate them beforehand.

Frequently asked questions about food sugar

Which sugar should you choose for baking ?

Granulated sugar is suitable for most cakes, biscuits and doughs. Icing sugar is better suited to icing, decoration and certain delicate preparations. To flavour a recipe, choose vanilla sugar and check whether it contains vanillin, natural vanilla extract or vanilla pod.

Can brown sugar replace white sugar ?

Not always. Brown sugar and unrefined brown sugar can change the colour, moisture and flavour of a preparation. In cookie dough or a sauce, this difference may be desirable. For meringues, whipped cream or recipes requiring quick dissolving, fine white sugar is generally more predictable.

How should you store a packet of sugar ?

Store it in a dry, cool place away from light, then reseal the packet carefully or transfer its contents to an airtight container. This helps prevent lumps from forming, particularly with icing sugar, brown sugar, palm sugar and flavoured blends.
