Although both are made from cassava starch, their size and use are completely different. Tapioca pearls (or boba pearls) are large (8-10 mm), often turn black when cooked, and are the star of bubble tea. The much smaller, white pearls (often called sago or simply small tapioca pearls) are typically used as a thickener in soups, creams, and desserts like the classic tapioca pudding.
Dry, uncooked pearls keep very well in an airtight container, stored away from moisture and light. Once cooked, however, they are best enjoyed fresh! Ideally, consume them within 4 to 6 hours. To prevent them from hardening, simply let them soak in a little sugar syrup at room temperature.
The trick is simple. As soon as they're done cooking, drain the pearls and immediately plunge them into a large bowl of ice water for one minute. This thermal shock instantly stops the cooking process and firms up their texture. Drain them one last time, then mix them with one or two spoonfuls of brown sugar syrup or honey. The syrup will coat the pearls and prevent them from clumping together.
